Ketchup is a basic condiment product which involves adding sugar and thickeners to water and a tomato base. Vinegar is also added to give it the acidic flavour.
Recipe Procedure
The tomato base and vinegar are added to the water and mixed. The salts, sugar, spices and thickeners are then added and mixed well to give a unifrom mixture. The mixture is then heated to 85°C for 15 minutes. It is then cooled and filled into containers.
