This is a soft icing recipe with minimal flow suitable for doughnuts. Agar is a gelatinous substance extracted from red algae which is often used in Asian desserts. Agar is suitable for vegetarians and thus can be a gelatine alternative. It usually requires heating before use (standard agar requires boiling for a few min to solubilise) therefore for a recipe like this, it is important to use a cold soluble agar.
Recipe Procedure
Blend all dry ingredients. Slowly add dry ingredients to stirred water at 50C. Blend until smooth.
