Using new apple fibres to create healthier food options for Welsh school children

CyberColloids have just completed a short research study to examine the potential to use new apple fibres, derived from Welsh cider processing pomace, as ingredients with the potential to replace fat in food items that are typically enjoyed by children. Together with Welsh partners Pennotec Ltd, and Bangor University we have produced new apple fibres and successfully used these to reduce the fat content in baked products. The project was overseen by Welsh Government’s Food and Drink Division and supported financially through the Innovate UK and Welsh Government Small Business Research Initiative.
